Tasting Notes
Aromas of crushed red cherries, wild strawberries, raspberries, pink flowers, violets, wet chalk, and delicate earthy minerality. The palate is remarkably pure and precise, delivering vibrant red and black berry fruit layered with saline minerality, subtle spice, and exceptional energy. Silky, fine-grained tannins and bright acidity create a seamless, elegant structure, culminating in a long, crystalline finish that beautifully captures the finesse and terroir of Gevrey-Chambertin.
Pairings
Pairs beautifully with refined dishes that complement its elegance and purity. It is an exceptional match for roasted duck breast, herb-crusted lamb, grilled pigeon, roast chicken with wild mushrooms, veal tenderloin, and pork with truffle or morel cream sauce. Earthy dishes such as mushroom risotto or truffle pasta also highlight its mineral complexity, while aged Comté, Gruyère, or Brie de Meaux make excellent cheese pairings.
Decant
30–60 minutes before serving. Serving temperature: 15–16°C.
Drinking Window
Approachable in its youth with a short decant, but it is expected to show its finest expression from 2027 to 2042+.
