From Biscuit Maker to Burgundy Legend: The Story of Domaine Dujac

A Different Kind of Beginning in Burgundy


In a region defined by centuries-old tradition, Domaine Dujac stands out—not for how long it’s been around, but for how boldly it began. Founded in 1967 by Jacques Seysses, a former biscuit manufacturer with a passion for fine wine, the domaine quickly rose from newcomer to icon in the Morey-Saint-Denis village of the Côte de Nuits.


Rather than inheriting vines through generations, Jacques trained under Gérard Potel at Domaine de la Pousse d'Or and purchased a small domaine called Graillet, which he renamed Dujac—short for Domaine du Jacques.

Whole-Cluster Fermentation and a Signature Style


From the very start, Dujac broke with convention. While many Burgundy producers destemmed their Pinot Noir, Jacques championed 100% whole-cluster fermentation. Though it was initially questioned, this technique has since become part of the domaine’s signature style: aromatic, lifted, and textural wines with the potential to age gracefully.

Today, Domaine Dujac is widely recognized for combining traditional Burgundian winemaking with a spirit of thoughtful innovation—reflected in their elegant expression of Pinot Noir across both Premier Cru and Grand Cru vineyards.


A Family Domaine Rooted in Organic Farming

Since the early 2000s, Jacques' son Jérémy Seysses, along with his wife Diana Snowden Seysses and brother Alec, have taken the helm. The family has continued to elevate Dujac’s reputation while also transitioning to organic viticulture and refining vineyard practices with sustainability in mind.


The domaine now holds plots in some of Burgundy’s most iconic climats, including:

  • Clos de la Roche Grand Cru

  • Clos Saint-Denis Grand Cru

  • Bonnes Mares Grand Cru

  • Vosne-Romanée Aux Malconsorts 1er Cru

  • Echezeaux Grand Cru


Each of these terroirs brings a different dimension to the Dujac portfolio, but they all share a clear family resemblance: precision, perfume, and poise.
