Tasting Notes

opens with captivating aromas of lemon zest, crisp green apple, white peach, toasted brioche, roasted hazelnuts, honey, and delicate pastry, layered with hints of chalk, white flowers, and subtle spice. The palate is vibrant and beautifully structured, combining concentrated citrus and orchard fruit with creamy texture, fine persistent mousse, and remarkable mineral tension. Notes of toasted almonds, nougat, and saline minerality unfold seamlessly toward an exceptionally long, refined finish.

Pairings

Pairs beautifully with elegant seafood and refined cuisine. It is a superb match for oysters, caviar, lobster with beurre blanc, seared scallops, grilled turbot, Dover sole, and roasted Bresse chicken with morel cream sauce. Its richness and vibrant acidity also complement sushi, sashimi, truffle dishes, and aged Comté or Parmesan.

Decant

Allow 10–15 minutes in the glass before enjoying as its aromas continue to unfold. Serve at 10–12°C in a white wine glass rather than a flute to fully appreciate its remarkable complexity.

Drinking Window

It is drinking beautifully now and is expected to reach its peak between 2025 and 2045+, with well-stored bottles capable of developing even greater complexity beyond this period.
