Tasting Notes

Offers fragrant aromas of black cherry, wild strawberry, raspberry, violets, and white pepper, complemented by subtle notes of dried herbs and crushed stone. Medium-bodied and vibrant, it delivers pure red and dark berry fruit with silky tannins, bright acidity, and a refined mineral backbone. Elegant and expressive, the wine finishes fresh and persistent, showcasing the finesse of Burgundian winemaking and the distinctive cool-climate character of Hokkaido.

Pairings

Pairs beautifully with roast duck, grilled pork, chicken yakitori, mushroom-based dishes, and charcuterie. Its bright acidity and elegant red fruit profile also make it an excellent match for salmon, tuna tataki, and Japanese cuisine, while soft cheeses such as Brie and Camembert complement its delicate, refined character

Decant

A brief decant of 15–30 minutes can help open up its notes of black cherry, wild berries, violets, and white pepper, though it can also be enjoyed straight from the bottle. Serve slightly cool at 14–16°C for optimal expression.
