Tasting notes
Refined and layered, opening with lemon zest, white peach, and green apple, followed by toasted brioche, almond cream, and dried flowers. Subtle notes of chalk, honey, and light smoke emerge with air, reflecting both maturity and terroir.
Parings
Pairs best with pure, elegant dishes such as fresh oysters or caviar, scallops, turbot or Dover sole, and simply prepared lobster. Its chalky minerality and fine acidity also work beautifully with Bresse chicken in a light cream sauce or aged Comté, highlighting finesse rather than richness.
