Few names in Burgundy evoke both tradition and innovation like Frédéric Cossard. Leaving the family’s dairy business behind, Cossard followed his passion for terroir-driven wines, founding Domaine de Chassorney in 1996.
Today, his Frédéric Cossard wines are celebrated for their purity, depth, and soulful expression—each bottle a testament to sustainable farming and meticulous, sulfur-free winemaking.

From Dairy Roots to Domaine de Chassorney
Despite a childhood steeped in dairy, Cossard’s fascination with his grandfather’s small Saint-Romain vineyard led him to plant his first vines in 1996. Located across seven appellations—including Les Folatières, one of Puligny-Montrachet’s prized premiers crus—Domaine de Chassorney has grown to 10 hectares, with recent acquisitions in Volnay and Pommard
Sustainable, Sulfur-Free Winemaking
Ozone Cleaning & Extended Fermentation
Cossard rejects conventional sulfur use, relying instead on rigorous hygiene—ozone-washed barrels—and extended fermentations. Whites ferment up to six months without temperature control, while reds undergo long macerations, all resting on lees until the following September.
Holistic Vineyard Collaboration
Beyond his own estate, Cossard partners closely with growers to ensure each parcel meets his strict organic and biodynamic standards, preserving healthy soils and genuine terroir expression
