Tasting Notes

A strikingly pure and terroir-driven Chenin Blanc that opens with elegant aromas of pear, quince, green apple, lemon blossom, white flowers, and citrus zest, layered over wet stone and subtle saline nuances. The palate is vibrant and beautifully textured, combining crystalline acidity with remarkable depth and precision. Concentrated orchard fruit is interwoven with chalky minerality and a fine, linear structure, leading to a long, energetic finish of exceptional freshness.

Pairings

pairs beautifully with refined seafood and dishes that highlight its vibrant acidity and mineral precision. It is an exceptional match for oysters, scallops, lobster, grilled turbot, Dover sole, sushi, and sashimi. Its textured palate also complements roast chicken, pork tenderloin, creamy mushroom dishes, and goat's cheese, particularly Loire-style Crottin de Chavignol. For vegetarian pairings, asparagus, leek tart, and mushroom risotto beautifully echo the wine's freshness.

Decant

Allow 15–30 minutes in the glass to fully reveal its aromatic complexity and layered mineral expression. Serve at 10–12°C.

Drinking Window

It is expected to drink beautifully from 2025 to 2040+, developing greater complexity with notes of honey, beeswax, lanolin, and toasted nuts.
