Produced from a tiny single vineyard in Yoichi, Hokkaido, planted with 13 Pinot Noir clones on volcanic clay and andesite soils, it is fermented predominantly with whole clusters and matured in seasoned French oak to preserve its pure sense of place. Tasting Notes
Elegant Pinot Noir with aromas of wild strawberry, red cherry, raspberry, dried rose petals, forest floor, fresh herbs, and subtle spice. Exceptionally pure and refined, it finishes long, graceful, and quietly complex, leaving a lingering impression of red fruit, undergrowth, and subtle floral nuances.
Pairings
Perfect with duck breast, roasted quail, grilled chicken, pork tenderloin, mushroom risotto, truffle dishes, salmon, tuna, and Japanese cuisine such as yakitori, sukiyaki, or mushroom-based dishes. Its vibrant acidity, silky texture, and signature umami also make it an exceptional match for refined kaiseki cuisine and lightly seasoned dishes that allow its elegance to shine.

Decanting Time: 15–30 minutes (max)
This wine is delicate, subtle, and aromatically fragile — typical of Japanese natural-style Pinot Noir. It does not benefit from heavy aeration.

Do NOT fully decant like powerful Burgundy.
Instead, pour into the glass and let it open naturally for 15–20 minutes.
A gentle swirl helps release red-berry and mushroom notes.
Use a Burgundy glass to allow aromatic expansion.
Drinking Window
2026–2042+. Already highly expressive with gentle decanting, but it will continue to gain complexity, earthy nuance, and greater harmony over the next 10–15+ years if well cellared. Its finest drinking is expected between 2028 and 2038, with top bottles capable of aging even longer under ideal storage conditions.
