Refined energy—poise and complexity in perfect balance.

The 2007 Domaine Georges & Christophe Roumier Clos de la Bussière is a study in elegance over power. Red cherry, dried rose, and subtle spice unfold with time, supported by fine-grained tannins and vibrant acidity. Though from a cooler, earlier-drinking vintage, this wine shows remarkable finesse and persistence—testament to Roumier’s meticulous touch and the vineyard’s inherent structure.

Tasting Notes

Refined and elegant expression of Morey-Saint-Denis. On the nose, it reveals delicate aromas of red cherry, cranberry, dried rose petals, and forest floor, with subtle notes of spice and crushed stone. The palate is medium-bodied and precise, offering pure red fruit, bright acidity, and fine-grained tannins that lend structure without weight. Silky in texture and mineral in tone, the wine finishes long and lifted, echoing with floral and earthy nuances.

Pairings

Duck breast with cherry reduction, herb-crusted lamb, or roast quail with mushrooms to highlight its red fruit and savory notes. For a vegetarian pairing, wild mushroom risotto or truffle-infused polenta will echo the wine’s forest floor and mineral nuances. Cheeses like aged Comté, Époisses, or Tomme de Savoie also complement its delicate structure and subtle spice.

Decant

30–45 minute decant is ideal. This allows the wine to open up and reveal its delicate floral, red fruit, and earthy nuances without stripping its elegance. Avoid aggressive aeration—use a wide-bottomed decanter and pour slowly.

Drinking Window

Optimal drinking window now through 2027. It has developed beautifully with over 15 years of bottle age, showing refined tertiary notes alongside fresh red fruit and vibrant acidity. While it can hold a few more years under ideal cellar conditions, it's best enjoyed sooner rather than later to capture its finesse, balance, and aromatic complexity at their peak.
