Tasting Notes
A wonderfully ethereal expression of Hokkaidō terroir: on the nose, bright wild strawberries and soft cherry skins mingle with forest-floor undertones of matsutake mushroom, pine resin and dried violet; the palate is light-bodied yet layered, offering delicate red-berry flavour framed by fine tannins and cool acidity, finishing with a lingering savoury, umami-rich note and shimmering minerality that evokes a misty woodland floor.
Pairings
This delicate, umami-driven Pinot Noir pairs beautifully with seared tuna, miso-marinated black cod, grilled duck, and fine mushroom dishes. Its silky tannins also complement Japanese cuisine such as chawanmushi, yakitori, and agedashi tofu, finishing gracefully alongside soft cheeses like Brie or Camembert.
