Tasting Notes

Opens with an intensely complex bouquet of candied lemon, grapefruit zest, white peach, dried apricot, toasted brioche, roasted hazelnuts, honey, and subtle smoky notes, layered over a striking chalky minerality. The mousse is silky and persistent, revealing evolving layers of citrus, orchard fruits, almond, pastry, and flinty minerality before finishing with extraordinary length, precision, and freshness. A monumental Champagne that continues to evolve gracefully with age.

Pairings

Pairs beautifully with refined dishes that complement its depth and vibrant acidity. Outstanding matches include oysters, caviar, bluefin tuna sashimi, lobster with beurre blanc, grilled turbot, Dover sole, roasted Bresse chicken with morels, seared scallops, and aged Comté or Parmesan. Its remarkable freshness also allows it to shine alongside premium Japanese cuisine such as sushi and uni, while its complexity makes it an exceptional partner for truffle-infused dishes and luxurious seafood.

Decant

Generally not necessary, but for a mature vintage like the 1996 Dom Pérignon, allowing it to rest in the glass for 15–30 minutes can help reveal greater aromatic complexity. Serve at 10–12°C.
